With a refreshingly smooth crisp taste. It’s the perfect cocktail for sitting back and relaxing, especially over summer

Ingredients

• 50ml Ecology & Co London Dry
• 35ml fresh lemon juice
• 15ml *sugar syrup
• Soda water
• Ice

Glass & Garnish

• Highball Glass
• Lemon Twist or Sprig of Rosemary

Method

• Fill a highball glass with ice
• Combine Ecology & Co London Dry, lemon juice, sugar syrup and ice into a shaker
• Shake well and strain over ice
• Top with soda and garnish with a lemon twist

*Sugar syrup; take one cup of sugar, 1/2 cup water, add a pinch of sea salt, simmer the syrup until it starts to thicken then strain.
